Chicken with Cashew Nut Curry Sauce

I’m getting a bit obsessed with kitchen gadgets these days – so far I have Nutribullet, Spiralizer, Food Processor, Juicer, Yoghurt Maker, Slicer Dicer, Mandolin Slicer, Grater… The list goes on and the kitchen gets more cluttered.

Anyway – decided to try this recipe for cashew nut curry because it meant I could play with my Nutribullet.

I put all the ingredients in and pressed play and the result is amazing, the sauce was so smooth! sadly it didn’t taste that great so I think I will have to play around with the spice portions a bit more.



Cooking the chicken here is always a longwinded process because I have to cook it first to remove the water – I don’t have the luxury of just throwing it in with everything else because then it will all become a soup.

So after pre-cooking the chicken,  I cooked the sauce – this was a tearful event because the onions were very strong


After cooking the sauce for about 2-3 minutes – trying to make sure it didn’t burn. I added back the chicken and some mushrooms and – well it looked very yellow and didn’t taste of much! but it was edible.
