I have always struggled to make nice ratatouille. I used to cut everything in disc shapes and spray with low cal spray.
Finally someone told me to stop using spray and use olive oil; once I did this, all was well 🙂
I made my own version by adding sweet potatoes & red onions which gave a really nice sweetness.
Another thing I tried was using freshly diced tomatoes rather than tin tomatoes.
After cutting everything up, I seasoned it with whatever I could find in the cupboard, but next time I think I will use basil and sweet paprika.
