Healthy Meatballs

Whenever I make meatballs they are usually so tasteless and dry – but I persevered and this recipe is now edible (although still a little dry).

Serves: 4
  • 400g Tin of Green Lentils
  • 500g Pack of 5% Fat Pork Mince
  • 1 Tbsp Wholegrain Mustard
  • Seasoning (Salt, Pepper, Cajun Spice)
  • 1 Onion chopped
  • 1 Pepper chopped
  • 1 Tbsp Tomato Puree
  • 1 Pack of Cherry Tomatoes
  1. Rinse and drain the lentils
  2. In a food processor, add the lentils, mince, mustard and seasoning
  3. Blend together and then roll into around 15 small balls
  4. Put these on grease proof paper and bake in the oven for 20 minutes at 180oc fan
  5. In a frying pan, add the onions, peppers and tomatoes.
  6. Add a little water and the tomato puree
  7. Cook for about 5 minutes
  8. Add the cooked meatballs and leave to simmer for a further 10 minutes
