I recently read a book called ‘The Calorie Myth’ and according to this book I should aim to get at least 30g of protein per meal and at least 10 portions of veg throughout the day. This veg portion seems a lot for me, especially since, after scrutinizing my diet, I realised I was only eating around 1-2 portions a day.
My idea of veg is usually lettuce, tomatoes and cucumber which is really boring! So I will be experimenting for the next couple of weeks with different combinations. Today I tried ‘julienne’ courgettes & carrots, seasoned with salt, pepper, garlic flakes & cayenne pepper.
Very happy with the results.
I spent quite a long time cutting the vegetables and thinking of what kitchen gadget I can get to automatically do it for me. i will have to investigate further.
I think presenting the veg this way makes it a tad more interesting. After cutting them, I sautéed in low cal spray with the spices and covered to let it steam for 5 minutes.
For my protein, I battered some chicken breasts and seasoned the same way! terrible I know.
After reading about the secrets to getting moist chicken, i made slits on the top of the chicken, added the spices and then sealed the chicken breast in a ziplog bag with some lime juice and olive oil.
After 5 hours of marinating I grilled them for 15 minutes, turning every 5 minutes.
The taste was nice 🙂 so I will definitely be making this again.
