    Jamaican Patties

    The nicest patties in the world are found in Jamaica in a restaurant called Tastee’s. Their pastry is thin and crispy and the patties are full of flavour, you could easily eat 3-4 patties in one sitting. On the rare occasion that someone brings these patties into my home there is always a fight and people hiding their share. I’ve always found the hardest part was making the pastry, I just can’t get the thin, flaky texture.     Gorgonzola Cheese, Prosciutto & Rocket Pizza

    I went on a short trip to Rome recently and tried this combination of ingredients on a Pizza. I fell instantly in love. The flavour was amazing. So naturally I ran home to try it for myself. I followed Paul Hollywood’s pizza dough recipe and added extra toppings that I thought would be great like mushrooms and onions. I have decided these additional ingredients just caused a distraction in taste and next time I will just make it as described by the Italian menu.

    Quiche Lorraine

    I can’t seem to get the hang of blind baking – I rolled out the shortcrust pastry and ‘massaged’ it into the tin. I then covered it with grease proof paper and put a large heavy bowl on top to hold it down. I did find baking stones in the supermarket but they cost ¬£4!

    Chorizo & Prawn Stir Fry

    I made this based on the Joe Wicks recipe, it looked so nice in his video I wanted to see if it also tasted nice. I don’t usually buy Chorizo because I’m just not slim enough to enjoy such luxuries and I admit when I started frying it and saw all the oil release in the pan, my arteries started to clog.

    Courgette Fritters

    I’m joining the world of stacked round objects, starting with my courgette fritters!¬† I’ll be honest, they tasted terrible but at least the picture is nice ūüôā I basically followed the Good Food recipe which I’ve added below simply to give this post content but I think next time I will add a lot more¬†seasoning!

    Meatballs in Eggplant & Tomato Sauce

    Meatballs, Eggplant / Aubergine, Tomato Sauce, Win!! I watched a video for this recipe on the ‘all recipes’ website and thought it looked nice & doable.¬† I made a few tweaks to make it less syns for slimming world, for example I used tin tomatoes instead of marinara sauce and lean beef mince instead of lamb. The taste was lovely and me nan even asked for another meatball!¬†
