
Braised Ox tail
Ox tail is the meat surrounding the top of the Cow’s tailbone and, since it is mostly bone surrounded by meat and fat, it is a dish best made on a calorie bomb day.
On the plus side, if you are on a low carb-high fat diet, then you can eat this guilt free with some salad.
Serves 4
Ingredients
500g ox tail, fat trimmed
1 large onion
2 stalks of spring onion
400g of Butterbeans
Pinch of salt
Pinch of black pepper
3 cloves of garlic crushed
1 tbsp dark soy sauce
1 tsp Cross & Blackwell browning
4 Bay leaves
1 tbsp cooking oil
Method
- Season the ox tail with the salt, black pepper, garlic, browning and soy sauce and leave to marinate for 20 minutes
- In a pan, fry the ox tail until browned
- Cook the ox tail on low heat for 3 hours
- Add the onions, spring onions, bay leaves and butterbeans and cook for a further 10 minutes
- Serve on a bed of steamed rice or Jamaican rice and peas
